Cattle lay eggs sometimes. The tool tip text is in Swedish and reads 'En dålig idé' meaning 'A bad idea' in English.
Currently there is no known use for cow eggs and no, they do not hatch.
Many players suspect that the eggs are part of a secret recipe for creating the magical Lembas, but such a recipe has not been distributed.
In all seriousness, this object probably doesn't exist in game.
