The term "tick" means 1 unit of time that it takes to burn 1 branch in a Kiln or an Oven. A tick is about 5 to 6 minutes of real-life time, which makes it approximately 15 minutes of in-game time.

In other words, if a recipe for apple pie calls for three ticks of cooking time, then the apple pie dough needs to remain in the oven for the time for three full branches to burn totally out from start to finish. Thus, the dough should always go in before the oven or kiln is lit. If you are not able to control this precisely -- for example if someone has loaded your oven/kiln to 100% with fuel -- then you may need to watch your recipes directly until they are ready.
