Burbot can be considered one of the worst fish, with two less useful stats, low FEP and a terrible FEP:Hunger ratio. It is advisable to give preference to other fish for consumption, but if nothing else is available, drying it for pure Constitution levelling is good, if your drying racks are just sitting there.
The fish can also be used to make Broiled Burbot, a Will+2 and Charisma FEP food with good Energy value, requiring only 2xSalad Greens together with the filet.

A different fish that has a very important, rare stat (Psyche) when roasted and spitroasted, Catfish is a rarer catch. When roasted, it yields its best FEP:Psyche ratio, roughly ~40% of it being Psyche but decreasing hunger by 3%. Spitroasted, it also adds a 0.5 PER residual FEP, but halves the hunger, which is a tossup in usefulness. Dried, Catfish loses its Psyche value and converts it to Intelligence, a more common stat amongst fish.

One of the best fishes, and food types, for Agility, Eel is good in any form, but as other fish, gets best FEP values when either spitroasted or dried. Spitroasting gives some valuable Dexterity FEP, and better FEP:Hunger ratio than dried, but drying preserves and improves only its Agility FEP.
As good as the FEP values are, Eels are most useful when cooked into Ring of Brodgar (Seafood), which gives +2 Agility, Perception and Psyche.

Graylings are common fish with low FEP:Hunger ratio, but have Agility and Perception, two good attributes new players are looking for in early worlds. When dried, it is arguably its best aspect, having the best FEP:Hunger ratio with only Perception as its FEP. Spitroast Grayling has good ratio, too, but spread it in three stats, rather than only one.

A rare type of fish, Ide has a small rare Psyche FEP, and also uses Dexterity as its main stat. Because of its rarity and small FEP:Hunger ratio, it is uncommonly fished and a welcome addition to fishers. When dried, Ide loses its small Psyche value, and when spitroasted, gives some Strength, a rare stat amongst fish.
