Demijohns are structures that act as storage for Wine, Vinegar, Milk, Weißbier, and Water. When placed in a Demijohn, Wine will not decay into Vinegar. It has a storage capacity of 50 liters. As Wine will not decay into Vinegar when placed in a Bucket (which holds 10 liters), a Cupboard filled with Buckets is more efficient (can hold 160 liters of any liquid) at storing large amounts of Wine for long-term use, although a Cupboard is not safe from decay outside of a house or Cave/mine. Thus, a Demijohn's main advantage lies in its (unverified but presumed) ability to withstand decay, and its portability. Also its content type, or empty state, is visible from a distance.
