A Metal Axe is the metal equivalent of the Stone Axe. When felling trees, it's faster and costs less stamina, and it can produce more blocks out of one log than the stone axe.
With a Metal Axe, you get ~25% more blocks per log than you get with a stone axe. Different types of logs provide different amounts of blocks, see more here.
It can also be used to shear a sheep, skin and butcher an animal or for combat. Identical to the stone axe, it increases the effectiveness of chipping stone, destroying objects (adds 1 damage when destroying) and affects quality of skins, raw meats, intestines, and entrails when skinning and butchering.
When it comes to felling trees, a Woodsman's Axe is even better. It chops trees slightly faster than a Metal Axe and yields the same high block output.

Notes
The quality of blocks of wood you can produce is not capped by axe quality, but skinning, butchering, and splitting logs into branches does take the axe quality into account.
